Summary:
When using Short Menus, you cannot control which fonts appear on the Font menu. The fonts listed are always Chicago, Geneva, Monaco, New York, and Venice.
To alter the contents of the Font menu, choose Full Menus from the Edit menu and follow the procedure listed on page 208 of the “Reference to Microsoft Word” manual.
