Hey, I'm interested in changing the Windows build tag permanently. How would I do this?

Not directly possible with Windows 10 changing the build tag everytime a cumulative update is applied and upon a feature update. You can try saving the contents of HKLM\SOFTWARE\Microsoft\Windows NT\CurrentVersion and adding a reg add command upon logon and logoff in Group Policy...
