how do i change the "microsoft windows xp professional" on the system properties in the registry to say something else on windows xp? or is it not possible?

It is possible, the version and edition information are stored in Windows Registry.

You might want to check sysdm.cpl.

It is in my copy of Windows XP. (If using Resource Hacker: String Table -> 12)

TweakNT could change the edition of Windows XP (registry), if you want to change the text, you should use a resource editor to find the string in sysdm.cpl (%SystemDrive%\System32\) and replace it.
