Grund sind die Hacker von gestern. Es sind schon wieder neue Adminuser da etc ...

Its simply Norton Ghost 9 set up to do hourly backups of the LANGSOURCE partition, which holds PHP, MySQL and my Mail Server. They're not all full backups. One full backup is done every day, the rest are incremental (just the files that have changed).

Then, theoretically, if a hacker breaks into the system, he can completely delete the backups? Or is it on a write only (no delete) FTP server?

If hacked via PHP, the entire system could be wiped. If hacked via FTP, there are no accounts with access to the LANGSOURCE or BACKUP partitions.

why not have your backups sent to your computer every now and then, just for safe keeping?
