In Mac OS 8 there was the Appearance Manager, that allowed the user to change the appearance of windows on a Mac. However, there were only about three themes that were released. I just stumbled on the site of the guy who worked on the Appearance Manager project, and he's got a large number of screenshots of a heap of different prototype themes.

Cool. It's a shame Apple never really used Appearence Manager to its potential. They didn't even implement any of their Copland themes with it: Hi-tek and Gizmo.

You can get Hi-Tech and Gizmo in a format that works with Appearance Manager in OS9 though - I can't remember if someone re-created the Copland versions (which are incompatible with the released OS8/9) or modified them somehow, or if they were present in another beta in a compatible form. I have them somewhere, I tried them on my G3 in OS 9.2.2.
