On Jensen Harris's Office 2007 UI blog, I found a post about Office build numbers, which was quite an interesting read. The build number is an encoded date, very much like Windows build tags.

Looking through the post's comments and there's discussion about other Microsoft products' build tags and numbers and how to decode them, like ones for Visual Studio.
