I noticed that these weren't the usual white diskette set and included an Intel logo on the side. Is there anything special or unusual about this set?

Intel logo is interesting, as that would make this some sort of Intel OEM disk. I'm not aware of any systems made by them directly, however it's possible it came as part of a promotional package where you bought a 486 or something and got a free copy of Windows.

Like mentioned above, must be some kind of OEM software for Intel PCs. Wonder if there's any difference between this and the box version.

As previously said, must be an OEM disk.
Diferences? Right now some vendors add their own applications to the OEM versions of the OS. Don't know if that was done before, could have some specific hardware drivers.
You could get a retail image and compare it.
