Okay, how did you get those icon groupings on your desktop?

Windows 8 Consumer Preview got boring, useless, and crappy so I decided to restore Windows 7 Ultimate in my laptop:
Offtopic Comment
Restoring Windows 7 did not really take time since other shenanigans kept me distracted to feel the time, including downloading and installing SP1 on 386/128 Kbps internet speed.

Naturally. The default iOS icon set is horrendous.

The only real disadvantages are that if you don't know what you're doing you could brick your iPod (I have the same model as you), and you have to manually check Cydia for updated packages. Oh, and you'll lose your jailbreak (and any installed apps or tweaks from Cydia) if you update your iOS version before there's a new jailbreak out for it.

What do you mean "brick your ipod"

As I said, it's easy if you know what you're doing. Takes five minutes to learn.

Personally I much prefer the default iOS icon set to the theme you're currently using - looks like it was whipped together in 10 minutes. :\ But to each their own.

My problem with it is that the icon colors tend to clash and the icons are too shiny. I know those seem like piddly complaints, but that's just my personal quirk.

I do agree with you a little bit about them clashing. Also, some apps have horrible app covers that look ugly.
