I found some UniATA drivers that work with the chipset I have. How would I go about slipstreaming these drivers in nLite or similar?

nLite supports Windows 2000. What you would need to do is run it, then after loading the install files choose "Drivers" from integrate at the top.

I did try slipstreaming before - it installed fine but at the end it gave me an INACCESSIBLE_BOOT_DEVICE error.
Safe Mode gives me IRQL_NOT_LESS_OR_EQUAL iirc.

That is quite interesting, what chipset are you working with? I would be willing to play around with this, recently managed to get an XP CD made with AHCI drivers :D.
