Here's an old Usenet FAQ for Quake that was last updated on the eve of Quake going from a large action-rpg to the FPS we know it as now. Pretty interesting stuff about how the tech at the time and the medieval gameplay worked (or might've worked).
There's an older version of this FAQ floating around, but its pretty easy to find and its just the one I posted with less content, a different version number and no warning about the content in it being obsolete.
As for builds, I don't there there would be anything that's the medieval game that iD wanted. Interviews with Romero (http://www.youtube.com/watch?v=Pq__3XNvvHI and http://www.quakeexpo.com/interview_romero.php) seem to indicate that work on the actual gameplay behind the medieval game never really got started. They were working on art for that game (which explains things like the Knight enemy), but it seems like they transferred to the gameplay we know now before any significant work went to the medieval game. At best, you'd be able to get a few techdemos from that era, if any still exist.
